Finally… managed to setup a private AI ChatGPT for my own use. It got tricky with the AMD ROCm driver issues with Docker, Ollama and Open WebUI but finally resolved it after a couple of days. Its certainly was not so simple to just google for resolutions, needs some tinkering with the commands and config to finally get it right.
